This is one of most requested recipe. These are flaky outside and soft, melt in mouth inside. This is a perfect festive time sweet. You can call it as Indian donut. But it differs in taste and texture from donut. Do try it at home and you can drop a comment for me. Do not forget to like, share and subscribe. Ingredients: • 2 cup Maida • 1/4 tsp Salt • 1 tsp Baking powder • 1/4 cup Ghee • 1/2 cup Water • 1 1/2 cup Sugar • 3/4 cup Water • Cardamom powder • Food color (Optional) • Oil for frying Method: • Take maida in a bowl and add salt, baking powder. • Mix everything well together and add ghee. • Mix ghee really good with maida until it gets nice crumbly texture. • Add a little water at a time and make dough. • Do not knead it. Mix it clockwise and bring the mixture together in a ball. • Cover and rest the mixture for about 15-20 minutes. • Heat up a pan on medium heat for making sugar syrup. • Add sugar, water and mix well. • Let the sugar dissolve completely in water. • After about 5 minutes when sugar dissolves completely, continue cooking the mixture for another 5 minutes on medium heat. • After cooking the syrup for about 5 minutes turn the heat to low and check the consistency of the syrup. • We need single thread consistency syrup. Turn off the gas and add cardamom powder, food color. • Mix well and sugar syrup is all ready. • Adding food color is optional. You can skip it if you don’t want. • Take the dough into a dish and take a small portion from it. • Make it round and make a hole at the center with a wooden whisk that is used to make buttermilk. • Pinch and fold inside the upper side near the hole of the balushahi like we did for murad modak and again make the hole with wooden whisk. • Keep them covered once ready. • Heat up oil in a pan on high heat for about 4-5 minutes and lower the heat to low when oil is hot enough. • Drop balushahi in hot oil and fry well from both sides. • After frying for about 3-4 minutes from lower side flip the balushahi over and fry well from other side too. • When lower side begins to get light golden color flip the balishahi over and fry until upper side gets nice golden color. • When both sides get nice golden color take balushahi our, drain excess oil and transfer hot balushahi directly into hot sugar syrup. • Turn the balushahi over in the syrup after soaking one side for just 2 minutes. • After soaking other side too for about 2-3 minutes from other side too, take them out and transfer into a dish. • Balushahi is all ready. • You can make about 11 balushahi form this proportion. Tips: • You can use 1/4 tsp baking soda and 1/4 cup curd in place of baking powder.
