Ingredients: 🍗 For Chicken Marination Chicken – 1 kg Dahi (curd) – 1 cup Crispy fried pyaz – 1 cup Adrak lehsun paste – 1 tbsp Lal mirch powder – 1 tbsp Haldi – ½ tsp Garam masala – 1 tsp Homemade biryani masala – 1 tbsp Namak – swad anusar Nimbu ka ras – 1 tbsp Fresh tomato puree – ½ cup Pudina ke patte – 1 handful Hara dhaniya – 1 handful Fresh grated jaiphal (nutmeg) – 1 pinch Saffron milk – 2 tbsp 🔥 For Smoke (Dhuaan) 1 small coal piece 1 tsp ghee 🍚 For Rice Basmati chawal – 3 cups (30 min soaked) Tej patta – 1–2 Laung – 4–5 Elaichi – 3–4 Dalchini – 1 small stick Namak – as required Ghee – 1 tbsp Nimbu ke slices – 2–3 Slit green chillies – 2 🌿 For Layering Extra fried pyaz Pudina Hara dhaniya 1–2 tbsp ghee Extra saffron milk STEP 1 – Marination Ek bade bowl mein chicken daal dein. Chicken ke upar dahi, fried pyaz, adrak lehsun paste, lal mirch powder, haldi, garam masala aur homemade biryani masala add karein. Namak, nimbu ka ras aur fresh tomato puree daal dein. Pudina aur hara dhaniya add karein. Ek pinch grated jaiphal add karein (bahut kam quantity). Saffron milk daal kar sab kuch achhe se mix karein. Kam se kam 1 ghante ke liye marinate hone dein (overnight best hai). STEP 2 – Dhuaan (Optional but Recommended) Ek coal piece ko direct flame par red hot hone tak garam karein. Ek chhoti katori ko marinated chicken ke beech mein rakh kar garam coal usme daal dein. Upar se thoda ghee daal kar turant lid se cover karein. 5 minute tak smoke absorb hone dein. STEP 3 – Rice Preparation Ek bade patile mein pani ubalne dein. Tej patta, laung, elaichi, dalchini aur namak add karein. Isme ghee, nimbu ke slices aur slit green chillies add karein. Soaked basmati chawal daal kar 70% tak cook karein. Pani nikaal kar side mein rakh dein. STEP 4 – Cook Chicken Heavy bottom pan mein marinated chicken daal kar medium flame par cook karein. Chicken ko 70% tak pakne dein. Masala rich aur slightly thick ho jana chahiye. STEP 5 – Layering Neeche chicken masala ki layer lagayein. Upar half cooked rice ki layer. Fried pyaz, pudina, hara dhaniya sprinkle karein. Thoda ghee aur saffron milk drizzle karein. Isi tarah layers repeat karein. STEP 6 – Dum Process Dhakkan tight band karein (chahe toh aata se seal karein). 5 minute high flame par rakhein. Phir 15–20 minute low flame par dum dein. Neeche tawa rakhna better hota hai taaki biryani jale nahi. FINAL STEP Dum complete hone ke baad 5 minute rest karne dein. Dhakkan khol kar side se halka sa mix karein. Garma garam serve karein.
