Join Chief Chocophile Lauren Adler and her guests from Rizek Cacao & Kahkow USA for a virtual tour, talk and tasting of chocolate made with cacao from La Magdalena, the largest cacao farm in the world planted entirely with "light-breaking" cacao (e.g., mostly white). We explore the elements that shape the flavors of chocolate from farm to bar with experts Max Wax and Elvis Reyes while tasting cacao and enjoying a birds-eye tour of the farm. While the genetics for this cacao came from Venezuela and Mexico (Criollo) and Peru (Marañon), the cacao physically arrived in the DR in the 16th century and the 18th century via Venezuela and Mexico. It took Rizek 20 years to find 10 trees with these genetics, which were considered lost. Located in the Sanchez Ramirez province in the Cibao region of the Dominican Republic the over 1,500 hectare farm is inter-cropped with coconut, banana, precious wood (mahogany and teak) and rubber trees.
