This will be our 1st encounter with a volcano while living in Alaska. Though we are not in immediate danger from lava, we are in potential danger from earthquakes & ashfall from Mt. Spurr's impending eruption. Ash from a volcano is shards of glass formed during the explosion process creating a very dangerous environment for our livestock as it can cause respiratory issues & can even be fatal. I ONLY endorse products that I personally use & love! 📌GET YOUR 2025 HOME FREE ALASKA CALENDAR HERE! ➡️https://www.createphotocalendars.com/... 📌HOME FREE ALASKA website: https://homefreealaska.com WHOOPIE PIE COOKIES: 2 cups gluten free flour 1 cup unsweetened cocoa powder 1/2 cup butter (softened) 1 tsp baking soda 4 tsp baking powder 1-1/2 tsp salt 1-3/4 maple syrup 1 tsp vanilla extract FILLING: 1 cup butter (softened) 8 oz cream cheese 2 tsp vanilla extract 3 cups powdered sugar 3 TBS milk How to make them: 1. Mix all ingredients together until well combined & place in the fridge for 30 minutes. Preheat oven to 375F. 2. Scoop dough by the spoon full onto the cookie sheets. Then gently flatten each dough ball, I use a little butter on my fingers so that the dough doesn't stick to my fingers. 3. Leave an inch of space between each cookie. Bake for 8-10 minutes or until cookie is no longer mushy. 4. Place on a cooling rack. Once cool, fill cookies with icing & top with another cookie. Place in the fridge or freezer! Serve once icing is set. FIESTA ENCHILADAS: (I double this whole recipe) 6 oz of meat of choice 1/4 cup sliced green onions 1 cup shredded mexican cheese blend 1 cup chopped tomatoes (divided) 1/2 cup corn 1/2 cup cooked rice 1/2 cup cooked black beans 1/4 cup salsa 6 (6 inch) corn tortillas 1/2 cup enchilada sauce Shredded lettuce & some sliced black olives (optional) How to make them: 1. Preheat oven to 375F. Spray two cooking dishes with cooking spray. 2. Brown ground beef or cook chicken until done. 3. Combine meat, 3/4 cup cheese, 1/2 cup tomato, corn, rice, beans & salsa, mix well. Spoon mixture down center of tortillas. Roll up & place in baking dish. Top with enchilada sauce. 4. Bake for 15 minutes. 5. Remove, sprinkle generously with cheese & black olives (if desired), bake 10 minutes more until the cheese melts. Serve with lettuce & remaining tomatoes. Enjoy!
