Spinach Rice/Palak Rice (Perfect for Tiffin Box) Spinach rice/Palak Rice with Basmati Rice fresh spinach, mint, coriander leaves, green chillies Spices This delicious Iron-Rich Rice is super quick & easy to Make for a quick meal, tiffin box Pair it up with Raita, pickle, korma curry, Chole Makhani -50g fresh baby spinach -3 green chillies -Handful fresh coriander leaves -2 spring mint leaves -3 tbsp oil +2 tbsp ghee+ 2 tbsp butter -1.5 glass of Basmati Rice -3 cups hot water with 1 tsp salt & 1 tsp sugar set aside -Whole garam masala:1” cinnamon stick, 1 black cardamom, 5 cloves,1/4 tsp fennel seeds, 1 bay leaves -1 small onion finely chopped -4 garlic finely cut Method -Soak rice :Wash, Rinse rice 2-3 times and soak for 20 minutes then drain the rice and set aside BLANCH SPINACH & PURÉE -Wash 2-3 times & soak spinach leaves in salt & vinegar water for 5 minutes, Drain and set aside -In deep pan let water come to a boil add washed spinach leaves immerse them completely in water, cook for 3 minutes -Remove immediately soak the leaves in bowl of ice cold water for 1 minute, then drain all the water and set aside ( this process to preserve the flavor & color of green leaves ) -In a chutney grinder add handful fresh coriander leaves, green chillies, mint leaves, blanched spinach leaves blend to a smooth purée and set aside -Heat oil and ghee add chopped onion stir and cook when onions are pinkish brown add garlic & whole garam masalas stir and cook until golden -Add soaked & strained Basmati rice stir gently for 1 minute -Now add spinach purée mixture Stir gently to combine well -Add hot water mix with salt & sugar, butter stir bring to a boil -Reduce the flame to very low, cover with a lid and cook the rice until all the water is absorbed (check a few times during cooking to ensure there is enough water depending on the quality of the rice, Then with fork gently stir the rice without breaking the rice grain -Enjoy spinach rice with pickle, Raita salad, with korma gravy.
