This version is the closest I’ve gotten to that delicious junky street food platter that’s loaded with meat, and covered in that addictive white sauce. It’s also surprisingly easy. Turn back now 0:00 intro 0:13 prep chicken 1:43 golden rice 3:23 white sauce 4:50 cook 6:17 serve Spice Blend Ingredients (used for the chicken and beef) 1 tbsp oregano 1 tbsp paprika 1 tbsp cumin Chicken Marinade Ingredients 1 pound chicken thighs 1 tbsp mayonnaise 2 cloves garlic 1 tbsp lemon juice 1 tsp black pepper 1 1/2 tbsp spice blend above + 1 tsp salt Beef Ingredients ½ pound ground beef (I used 80/20) 1 1/2 tbsp spice blend above + 1/4 tsp salt Rice Ingredients 2 cups rice 2 cups water 2 Tbsp olive oil 1/2 Tbsp annatto seeds 1 tsp turmeric 1 tsp paprika 2 tsp cumin 1 bay leaf White Sauce Ingredients ½ cup mayonnaise (Note: if you want to be healthier you can switch out some mayo for greek yogurt but the original definitely mayonnaise based) 1.5 Tablespoons lemon juice 2 Tablespoon vinegar 1/2 Tablespoon sugar ¼ teaspoon dill ¼ teaspoon oregano ¼ teaspoon garlic powder ⅛ teaspoon salt ¼ teaspoon black pepper Optional: 1/8th tsp MSG 1/8th tsp xanthan gum Side Salad ¼ head lettuce, chopped into bite size pieces ½ roma tomato, chopped into bite size pieces Chicken Directions 1. Cut chicken thighs into bite size pieces and add to a mixing bowl. 2. Add mayonnaise, garlic (press the garlic through a garlic press), black pepper, and spice blend to the bowl. 3. Mix all together and let chicken marinade for 20 minutes. 4. Cook chicken in a large skillet over high heat about 4 mins a side. Beef Directions 1. Mix spice blend into ground beef and press together 2. Cook alongside the chicken for about 2 mins each side on high heat, breaking it up in between Rice Directions 1. Rinse the rice under running water for about 20 to 30 seconds then let drain. 2. To color the rice, heat oil in a pan and add the annatto seeds. Gently heat over medium heat until annatto seeds start to release their color. Remove from heat. 3. Add the drained rice to an instant pot. Strain the annatto seed oil and add to the rice. 4. Add the turmeric, paprika, and bay leaf to the pot. Mix until the rice is evenly coated, then add the water. 5. Mix one more time and cook at manual high pressure for 7 minutes. Allow for natural release after the rice is finished cooking. White Sauce Directions 1. Add all the sauce ingredients into a cup. Use a hand blender (or whisk by hand) to blend all the ingredients together until homogenous. 2.
