Instant Pav Bhaji in Pressure Cooker | Quick Mumbai Style Pav Bhaji Recipe | Easy Street Style Pav Bhaji If you love Mumbai street food, this Instant Pav Bhaji in a pressure cooker is the easiest way to make delicious pav bhaji at home. This recipe is quick, flavorful, and perfect for lunch, dinner, or evening snacks. Follow this simple step-by-step recipe to make restaurant-style pav bhaji in minutes. Ingredients Fresh coriander Green chilli Ginger Garlic cloves Chopped onion Jeera (cumin seeds) Oil Butter Vegetables: potato, cauliflower, beetroot, capsicum, carrot, and peas Turmeric powder Red chilli powder Salt Pav bhaji masala Kasuri methi (dried fenugreek leaves) Water Step 1: Prepare Green Masala To make the green masala paste, add fresh coriander, green chilli, ginger, and garlic cloves to a mixer grinder. Grind on pulse mode until you get a slightly coarse paste. Step 2: Cook Vegetables in Pressure Cooker Take a pressure cooker and add oil and butter. Once heated, add jeera and let it splutter. Add chopped onions and sauté until they turn soft. Now add the prepared green masala paste and roast it for 2–3 minutes until the raw smell disappears. Add all the chopped vegetables: potato, cauliflower, beetroot, capsicum, carrot, and peas. Then add turmeric powder, red chilli powder, salt, and pav bhaji masala. Mix everything well and add a little water if needed. Close the pressure cooker and cook for 3–4 whistles. Step 3: Mash the Bhaji Once the pressure releases, open the cooker and mash the vegetables well using a masher until you get a smooth bhaji texture. Step 4: Prepare Butter Tadka Take a pan and add butter. Add red chilli powder, kasuri methi, and a little pav bhaji masala. Roast this mixture on low flame for 2–3 minutes. Now add the mashed vegetables from the cooker and mix well. Cook and stir the bhaji for 6–8 minutes until it reaches a medium thick consistency. Serving Garnish with fresh coriander and a little butter on top. Serve hot with toasted pav, lemon, and chopped onions.
