Here's the instructional video for one of my favorite Vietnamese noodle soups Bun Rieu! This soup has an acidic tomato flavor while slightly sweet which really sets it apart from all the other Vietnamese soups. The total cooking time for this broth was two hours. Serves 6-8 bowls Ingredients: 3 lb pork bones 5 qt water (20 cups) 2 large tomatoes 2 tbsp rock sugar 1 onion Fried tofu (optional) 1 Vietnamese pork roll/cha lua 2 packs vermicelli noodles Rieu (shrimp/crab paste) Ingredients: 3/4 cup dried shrimp 1/2 lb shrimps peeled and deveined 1/2 tsp salt 1/4 tsp pepper 1 jar crab paste 1 tbsp fish sauce 1 egg Season to taste: Please add more or less according to your preference. 1 tsp salt 6 tbsp fish sauce 2 bun rieu seasoning spice cubes 1 tsp mushroom seasoning 1 tsp annatto oil for broth color enhancement (optional) Garnish: Chopped green onions, cilantro and thinly sliced onions Serve with bean sprouts, shredded banana flower and water spinach, mint, lime and shrimp paste optional. Instructions: 1. Boil bones to remove impurities then rinse and scrub well. 2. Place bones in a pot with 5 qt water, 2 tbsp rock sugar and 1 whole onion. 3. Soak dried shrimps in warm water for 30 minutes minimum. 4.Cut tomatoes. 5. Heat oil in a pan with 1 tbsp minced garlic and fry till fragrant then add in tomatoes. Sauté tomatoes for about 2 minutes until it softens. 6. Add tomatoes into the broth pot. 7.Bring pot to boil and skim the foam then reduce to simmer. Continue to skim the foam throughout the cooking process. 8.Make the rieu by adding all of the rieu ingredients EXCEPT the egg into a food processor. Process on low mode for about 15 seconds to create the paste. 9. Pour rieu into a bowl then add the egg and mix. 10. After one hour of cooking remove the onion from the pot. 11. Use a spoon to scoop the rieu and drop it into the pot. It will float to the top once it's cooked. 12. Season to taste. See above ingredients to see what seasoning I added. Add more or less to your preference then let simmer for one more hour. 13. Meanwhile prepare your garnish, slice pork roll and cook your noodles per package instructions. 13. Right before broth is done cooking you can add in the fried tofu if you want some. 14. Prepare your bowl with the desired amount of meats, noodles and hot broth. Garnish and serve with fresh veggies.
