Which is very valuable when having access only to a "normal" audio interface and recording your tracks straight to your DAW of choice (Pro Tools, Logic Pro X, Ableton, Cubase, Bitwig, Reaper, Nuendo, FL Studio, Mixcraft, Audition, Sequioa or else). My favorite so far are Cocoa and Vanilla. Cocoa for its transformer sound thanks to its Carnhill transformer (that you can find in many iteration of the Neve 1073 preamplifier designs) and Vanilla for its soft high-end, almost tape like. Although I am often use Truffle for some heavy saturation/distortion for a drums trash microphone. I'd favor Mint for mixing and Chilli for recording intimate tracks that needs presence or a lot of aggression. Like rap vocals for examples or low-male vocals. Pepper is great on instruments that needs to retains their brightness and punch, like snare or acoustic guitars for example. As Salt, it does what it says, boost the signal in a very clean and clear way. Great for pushing preamps such as some API Preamps who would lack of an output gain. So you can push the input transformer without clipping your A/D converters.
