Cherry Pie Bars Ingredients For the Batter: • 1 cup softened butter • 2 cups sugar • 4 eggs • 1 teaspoon vanilla extract • 1 teaspoon almond extract (use less almond if desired) • 3 cups flour • 1 teaspoon salt • For the Filling: • 2 cans (21 oz. each) cherry pie filling • For the Glaze: • 1 cup sifted powdered sugar • ½ teaspoon vanilla extract • ½ teaspoon almond extract (use less if desired) • 2 tablespoons milk Instructions: 1. In a large mixing bowl, beat together 1 cup softened butter and 2 cups sugar on medium speed until creamy. 2. Add 4 eggs, one at a time, beating after each addition. 3. Mix in 1 teaspoon vanilla and 1 teaspoon almond extract. 4. Gradually add 3 cups flour and 1 teaspoon salt until batter is well combined. Assemble Bars: 1. Spread 3 cups of the batter in a greased pan. 2. Spread 2 cans of cherry pie filling over the batter. 3. Drop the remaining batter by spoonfuls on top of the cherry pie filling. 4. Bake at 350°F for 40–50 minutes, or until the filling is bubbly, the cake tests done, and the edges are golden brown. Let cool. Prepare Glaze: 1. In a small bowl, whisk together 1 cup powdered sugar, ½ teaspoon vanilla, ½ teaspoon almond extract, and 2 tablespoons milk until smooth. 2. Drizzle glaze over the bars before serving.
