MASTER COOKBOOK RECIPE # 84 84) Texas Hash with Beans Ingredients: 1 onion, chopped 3 Tbsp bell pepper, chopped 3 Tbsp olive oil 1-1/2 lb. ground chuck 1-1/2 cups hot boiling water 2 tsp beef bouillon granules 1 Tbsp chili powder 14.5 oz can diced tomatoes 14.5 oz can kidney beans, drained 2 tsp salt 1 tsp black pepper 1 cup uncooked rice 8 oz package grated cheese (Mexican blend) Instructions: In a large skillet, sauté the onion and pepper in olive oil for 4-5 minutes. Add the ground beef and cook until it is broken apart and browned. Drain the excess grease from the meat. Microwave the water in a liquid measuring cup until it boils, about 1 minute. Add the bouillon; stir well. In a separate large bowl, combine the water, bouillon, chili powder, diced tomatoes, kidney beans, salt, pepper, and rice, then mix thoroughly. Add half of the meat mixture to this bowl and stir again. Spray a 4-to 5-quart baking dish with cooking spray. Pour the mixture from the bowl, including beans, rice, and tomatoes, into the baking dish. Sprinkle the entire top with shredded cheese and add the remaining meat on top.
