Suya is one of the foods I have the fondest memory of from Nigeria. I've decided to make a simple suya recipe today. Btw for those not in the know, Suya is Nigerian BBQ meat with spicy peanut rub. Utterly delicious and addictive. The normal way to make suya pepper is using Kuli Kuli. I will dispense with this as it's not always easy to get hold of and I feel it's a pain to make. Ingredients list for suya pepper mix: Peanuts (whole of shelled) African pepper (https://en.m.wikipedia.org/wiki/Grain...) Chilli powder Garlic powder Ginger powder Chicken bouillon powder or stock cubes Since you are making a rub it is important not to introduce any liquid. When you grind the peanuts you want to pulse and not over process otherwise you will end up with peanut butter. You can substitute the African pepper for plain black pepper although there is a difference in flavour. For the pickled onions: Dissolve 100 grams of sugar and 20 grams of salt in 600 of vinegar (I used 300 ml apple cider vinegar with 300 ml white vinegar). If you are only wanting a quick pickle you should slice your onions thinly. Place in a bowl and pour your pickling mix over the top and leave to rest. If you are going to pickle over a few days you can pickle your onions whole.
