You can use a fat separator or a spoon for this step. Heat the Broth: Pour the broth (or strained pan drippings) into a saucepan and bring it to a gentle boil over medium heat. Prepare the Roux: In a separate small saucepan, melt the turkey fat (or butter) over medium heat. Whisk in the flour gradually to create a smooth paste, or roux. Stir constantly for 3–5 minutes until it reaches a light golden color, being careful not to let it burn. Combine Roux with Boiling Broth: Once the broth is boiling, slowly whisk in the prepared roux, stirring continuously to avoid lumps. Add Browning Sauce: Add a small amount of browning sauce to deepen the color of the gravy and give it a richer, more appealing appearance. It can also add a subtle, savory flavor that enhances the overall taste of the gravy without overpowering the natural turkey flavors. Simmer and Thicken: Reduce the heat to low and allow the gravy to simmer, stirring frequently until it thickens to your preferred consistency (about 5-10 minutes). Season to Taste: Taste the gravy and season with kosher salt and black pepper as desired. Keep in mind that pan drippings may already be salty, so adjust as needed. Serve: Once the gravy has thickened and reached the desired flavor, remove it from heat.
