Don’t worry—I’ve also converted them into cups, spoons and ounces to make it easier for everyone to follow along. Ingredients: for yeast active Luke warm milk- 30 ml, 0.127 cups, 1.06 ounces Sugar-10 gm, 1 tbsp, 0.35 ounces Active dry yeast- 4 gram, 1 tsp, 0.14 ounces Bread flour- 275 gm, 2.3 cups, 9.70 ounces Sugar- 30 gm, 0.15 cups, 1.06 ounces Salt- ½ tsp, 3 gm, 0.1 ounces Cold milk- 70 ml, 0.296 cups, 2.47 ounces Ice cubs- 20 gram Egg- 1 (medium size) 50 gram Soft unsalted butter- 30 gm, 1.06 ounces Method:- 1: Activating the Yeast wake up the yeast with 30 ml lukewarm milk, 10 g sugar, and 4 g active dry yeast.( If you’re using instant yeast, 6 g works fine, and no activation is needed—just mix it in.) Stir and let it rest for 10-12 minutes until foamy. If it doesn’t foam, start over—it happens!" 2: Preparing Dry Ingredients While the yeast activates, mix 275 g bread flour, 30 g sugar, and ½ tsp salt. Sift the ingredients—it helps keep the dough light and lump-free. 3: Ice Milk Trick Here’s a pro move: mix cold milk, ice cubes, and one egg. The ice keeps the dough cool during kneading, preventing it from getting sticky. It also slows fermentation, giving the dough better flavour and elasticity. Simple but game-changing! 4: Kneading the Dough Add the dry ingredients to a bowl, pour in the yeast mixture, and slowly add the ice milk-egg mixture. Knead until the dough comes together, for 3-4 minutes, then add 30 g softened butter. Knead for about 12-15 minutes( depends on the dough kneader , might takes less or more time) until the dough is soft, smooth, and elastic. 5: Shaping and Proofing Divide the dough into 30 g pieces, roll them into balls, and rest for 15 minutes. Flatten slightly, poke a hole in the centre, and stretch. Proof for 1-2 hours, depending on the weather temperature, until doubled in size. If it springs back slowly when pressed, it’s ready. 6: Frying the Donuts Heat oil to 160°C (320°F). Gently fry the donuts for 2-3 minutes on each side until golden. Look for the signature white ring—it’s the mark of perfection! Tips for proofing 1-Proofing donut dough is a critical step that can make or break your final result.Letting the dough proof for too long can lead to overproofing, while cutting proofing time short results in under proofed dough. 2-Proofing in areas that are too cold, drafty, or inconsistent in temperature can slow or halt the rise.Use a controlled proofing method, like a slightly warmed oven, or find a warm, draft-free spot in your kitchen. 3- If your kitchen temperature is too hot, the dough can ferment too quickly, leading to overproofing. A simple trick is to add a few ice cubes to the dough while kneading. This helps keep the dough temperature lower, slowing down yeast activity and preventing overproofing. 4-To get a white ring on your donuts, ensure the dough is soft and well-proofed, the oil temperature Around 160°C, and the donuts float freely while frying. Avoid over proofing. 5-Dough is ready when it has doubled in size and springs back slowly when pressed gently. Don’t rely solely on the clock—observe the dough. 6-Dough rises faster in summer. Check it after 45 min to 1 hour rather than relying on standard proofing times. Best Winter Proofing Techniques: 1-The oven light generates gentle warmth, creating an ideal environment for proofing. Steps: Place the dough in a lightly greased bowl and cover with plastic wrap or a damp cloth. Put the bowl in the oven with the light on (but keep the oven off). For added warmth and humidity, place a bowl of hot water in the oven. 2-Steam from heated water warms the microwave interior. Steps: Heat a cup of water in the microwave for 1-2 minutes until steamy. Place the covered dough in the microwave next to the cup.
