Those I bough from delivery service is thicker so that I cut them in half myself. When I buy the salmon steak, I will clean out the fish scale again before I cure it with salt. I used to pan fry the salmon steak, then I found out it is easier to bake it. I don't need to constantly watching over it. 材料 Ingredient: 中間帶骨鮭魚片 Salmon steak with bond in the middle type 鹽 Salt 作法: 買切好的可以直接跳到3鹽漬的步驟 If you buy the salmon with thickness you like, go to step 3 1. 用刀在水下去魚鱗 Clean out the fish scale with running water 2. 把後的魚片再切半 Cut the steak to the preferred thickness 3. 在於的兩面都抹上鹽 Cure the fish with salt on both side 4. 把魚片分開用冷凍袋或者真空包裝好冷凍. 要煮在退冰. You can increase the temperature for faster result 8. 通常都會有魚油,放置一下大部分會被魚肉回吸. 或者拿起來拌飯或拌麵也不錯. There will be some fish oil, let the fish rest and the meat will suck back some fat, if not all. The fish oil is also good to go with rice or mix with noodle.
