Soft, zesty, and bursting with lemony flavor 🍋 These Italian-style lemon cookies are perfect with tea, super easy to make, and kids love them too! RECIPE: Egg: 1 Lemon zest: 1 teaspoon Sugar: 1/4 cup Oil : 1/8 cup Milk : 1/8 cup All purpose flour: 1+ 1/4 cup Salt : a pinch Baking powder : 1/2 teaspoon CREAM CHEESE FILLING: Cream cheese :1/4 cup Butter : 1 tablespoon Icing sugar: 3/4 cup Vanilla essence: 1/2 teaspoon 🍋 Lemon Cookies – Instructions: 1. Preheat your oven to 160°C . Line a baking tray with parchment paper. 2. In a bowl, mix sugar and lemon zest ,it helps to release the lemon flavour. Beat in one egg and whisk until combined. 3. Add the oil, milk. Mix well until fully combined. 4. Add the flour, baking powder, and a pinch of salt. 5. Gradually add the dry ingredients to the wet mixture. Mix until a soft dough forms. It should be slightly sticky but manageable. If too sticky, add a teaspoon of flour. 6. Scoop small portions of dough and gently roll into balls (you can use a spoon or your hands). 7. Shape the dough in the shape of lemons and dip them into sugar. Place them on the baking tray and flatten slightly with your fingers or the back of a spoon. 8. Bake for 10–12 minutes, or until the bottoms are lightly golden. The tops will remain pale. 9. Let them cool completely on a wire rack. 10. Fill the cream cheese filling and sandwich the cookies.
