This delicious spinach dish might seriously upstage your entree'! Even people who've previously turned up their noses at the mention of spinach will compliment you on this amazing dish. It's colorful, easy to make, and loaded with flavor. You adjust the "heat" to the level you like, or serve a tame version with the little bit of heat the jalapeño cheese provides. CREAMY JALAPEÑO SPINACH 8 tablespoons butter 4 tablespoons all-purpose flour 4 tablespoons onion, finely chopped 12 ounces evaporated milk 1-2 cups vegetable liquor (reserved from cooked spinach) 2 teaspoons Worcestershire sauce 1 ½ teaspoon celery salt 1 ½ teaspoon garlic salt 1 teaspoon ground black pepper ¼ teaspoon cayenne pepper, optional 12 ounces jalapeño cheese, cut into 1” cubes 40 ounces frozen, chopped spinach Put one cup water in a large, microwave safe bowl. Heat until steam begins to rise from surface. With potholders, carefully remove dish from microwave. Add spinach to the water and cover with plastic wrap. Return to microwave and heat on highest setting for 4 minutes. Carefully remove from microwave. Stir. Spinach should be very hot, if not return to microwave until it is. Let cool. Drain spinach thoroughly, reserving drained liquid. In large pot, melt butter. Add flour stirring to incorporate but not to brown. Add onions and cook until soft and translucent. Pour in milk, spinach liquor, and Worcestershire sauce. Stir with a whisk to combine. Switch to a spoon, continuing to stir. As mixture begins to thicken add seasonings and cheese. When cheese is almost melted, add spinach. Add more spinach liquor if needed. The mixture should be very creamy. Taste for salt and pepper. Adjust as needed. This dish can be made ahead and reheated in the microwave or an oven-safe dish. It also freezes beautifully. Enjoy! **Note - I spoke rashly in the video.
