Celebrating Diwali with this comforting and luxurious restaurant style dish - Dhal Makhani. I have no patience but this slow cooked bowl of deliciousness is worth the wait. Reminiscent of family gatherings, this dish is full of happy vibes perfect for Diwali. Using @anchor_dairy brings back those memories of the way my mum makes it. Happy Diwali! #AnchorButter #Diwali #celebrate #dalmakhani #ButterTheFoodButterTheMood Serves 6-8 250g Black Whole Urad Dal 1 Black Cardamom Pod 5 Green Cardamom Pods 1 Cinnamon Stick 3 Tablespoons Ginger Garlic Paste 2 Tablespoons Tomato Purée 1 Tablespoon Kashmiri Chilli Powder 1 Tablespoon Garam Masala 1.5 Teaspoon Salt (or to taste) 60g Anchor Butter Dash of cream for Garnish Small bunch fresh Coriander 6 White Burger buns - spread with Anchor Butter Method : Soak Black Dhal in cold water overnight or at least 4 hours in a covered pot After soaking, rinse the water 3/4 times until it runs clear Cook for 2 hours, bring to the boil and then a gentle simmer until soft on the hob. You can also cook in the pressure cooker for half hour. If cooking on hob, remove scum from top as it appears Combine the tomato purée, Kashmiri Chilli Powder, salt, Garam masala and Ginger/Garlic paste. Mix into a paste. Set aside. In a deep pot, melt a tablespoon of Anchor Butter, add the black and Green Cardamom pods with the cinnamon stick. Once it sizzles, add the black dal. Add the tomato spice mix and the 50g of butter. Give it all a stir and add a cup of boiling water enough to cover the lentils. Bring to a ferocious boil uncovered and then lower the heat to simmer for 1-1.5 hours covered. Once ready, finish with a little dash of cream. Stir. Spread butter on the inside of soft white burger buns. Toast on a dry frying pan. Serve the Dal Makhani in bowl, finish with a drizzle of cream, a small knob of butter and a flourish of fresh coriander. Enjoy dunking the bread in the Dhal, or serve with naan and rice with an onion salad. Happy Diwali!
