Mix until smooth and creamy. Add in the eggs and vanilla extract. Mix, mix, mix! Add in all of the dry ingredients, mix until combined. Next goes in the cranberries, pecans and white chocolate chips. The dough will be very thick and somewhat difficult to handle by now. Lastly, add in the oatmeal, at which point I like to switch to a spoon for mixing. Using a cookie scooper, scoop out about a tablespoon's worth of dough, roll it into a ball and place it on a parchment lined baking sheet. Leave a little room for spreading. Into the oven at 350 degrees for 10-12 minutes or until the edges are golden brown. Let your cookies cool for 1-2 minutes before attempting to move to a cooling rack. Store in an air tight container!
