Lettuce, spinach, mustard greens, and many other leafy veggies can be harvested many times over using the cut and come again method. As long as you don't damage the growing tip or "crown" of the plant, you're in good shape. Either take scissors and chop off the outer, mature leaves, or come in with a high-quality and SHARP chef's knife and slice off just above the crown.
