A simple and delicious recipe that is equally amazing! Amazing because of its simple hero ingredient— Cucumber. I enjoy how the process of cooking just makes any vegetable, fruit or grain shine through in unexpected ways :) This recipe has Semolina (Rava/Sooji), Jaggery and Coconut. A little necessary fat is provided by Vanaspati, but you may use Ghee. This particular demonstration shows a healthy, vegan cake that can be cherished with your afternoon tea or coffee. This is a recipe I learnt from my sister-in-law, Rosita. A cake could not get any simpler than this. Mog Asum❤️ 1 US Cup = 240 ml Ingredients: 3/4 Cup or 180 grams Semolina (Rava/Sooji) 3/4 Cup or approx 100 grams Grated Coconut 3/4 Cup or 140 grams Cane Jaggery (aka Cane Sugar) 3/4 Cup or 200 grams grated Cucumber 1/4 piece or 1/2 teaspoon Nutmeg Powder 1/2 teaspoon Salt 1 Tablespoon Vanaspati (or Ghee) Oil for greasing the tin Baking Instructions: On a stove-top, cover and heat a large vessel with a thick base of Salt for 5-6 minutes on high heat. Place a stand at the centre. Once hot, place the baking tin on the stand, cover and cook for 25-30 minutes on a medium flame. Check with a skewer. Turn off the heat and cover again for 5 minutes.
