Welcome back to Cooking with Carassauga, as we bring you a tasty dish inspired by our Armenian pavilion. If you are looking for a healthy vegan meal, you must try this ‘Vospov Kofta’ recipe. Follow along with Sabine Mansour - nutritionist as she shares with you how to make this delicious meal. Check out the recipe below and let us know how your Kofta turns out. INGREDIENTS (Makes 40 pieces of Kofta) For the salad • 1 cup med size tomato chopped • 1 cup of chopped fresh Italian parsley • 1 cup chopped green onion • 2 tbsp chopped fresh mint • Sea salt to taste • 1 tbsp red pepper powder • 1 tsp cumin powder • 1 tbsp lemon juice For the Kofta • 1 cup Red Lentils • 1 cup Bulgur #1 • 1 cup chopped onion • 2 tbsp Red Pepper paste • Sea salt to taste • 1 tbsp Red pepper powder • 1 tsp cumin powder • 2 tbsp lemon juice Garnish • Lemon slices • Chopped parsley • Chopped green onion • Turnip pickles • Green lettuce leaves Cooking Instructions 1. Start by chopping the tomato, parsley, green onion and yellow onion. Place all items in separate small containers. 2. In a pot, combine the lentils with the water, cover and bring to boil on high heat. Reduce the heat to simmer and cook for about 20-25 minutes. 3. While the lentils are cooking, prepare the onion mixture that will be added to the cooked lentils. 4. Add 2 tbsp of olive oil in a frying pan, add chopped onions and cook over med high heat. Stir in the cumin powder, sea salt, red pepper powder. Then mix in the red pepper paste. Cook for 8-10 mins to soften and brown the onions. 5. Once the lentils are cooked, turn off the heat and add ½ cup of olive oil, 1 cup of Bulgur and mix well. Stir in the onion mixture. Add 2 tbsp of lemon juice, mix and cover. Leave the mixture covered for about 20 mins. 6. While waiting, prepare the salad. In a bowl add the tomatoes, green onions, parsley, fresh mint, 1 tbsp of lemon juice, the salad spices and 2 tbsps. of olive oil. Mix well. 7. To the lentil mixture add the remaining parsley and green onions. Mix it together. 8. Once the Kofta is chilled, use your hands to make finger-shaped patties. Once shaped, transfer the patties to a large platter of lettuce leaves. 9. Decorate your platter with the garnish. Serve your salad and plate your Kofta. Enjoy.
