Red Lentil Curry (full amount) Ingredients: A small amount of oil 1 medium onion 2 cloves garlic chopped finely ( i also added celery, peppers and grated carrot) 2cm fresh ginger grated (or half tsp ground ginger) 2 tbsp. curry powder (or 2 flat dessert spoons of Madras curry paste half tsp Garam Masala ( I didn't need this) 1 tsp Cumin 200gwashed red lentils 400g chopped tomatoes (you could use passata depending on how you like your sauce) 400mls Coconut milk full fat or reduced (I only used 100mls) 200mls vegetable stock A couple of handfuls of spinach Once the oil is hot add onion, garlic, (celery, grated carrot and peppers) sauté down briefly. add all the spices and again allow them to infuse into the vegetables. Add the chopped tomatoes and vegetable stock, Add the washed lentils stir through well and bring to the boil. Turn down the heat and allow to simmer gently until the lentils are almost cooked then add the spinach and finally the Coconut milk. Season and bring back up to the boil and simmer gently until cooked. Serve with rice or naan bread for a delicious meal. Freezes well.
