⬇️⬇️English recipe follows⬇️⬇️ 炒腰果秘訣 腰果鮑魚 材料: 刀嘜金裝濃香花生油 腰果1斤 鮮鮑魚10隻 三色燈籠椒各1個 椰菜花適量 甘筍半個 薑1舊 乾蔥頭8粒 蒜頭1個 蔥適量 處理: 1. 腰果,放玻璃盤內,加入粗鹽2湯匙,加入清水浸1小時以上,去除污漬,及加入少許鹹味。 2. 燈籠椒,清水洗乾淨,去椗,去籽,切細塊。 3. 椰菜花,洗乾淨,切細舊。 4. 甘筍,去皮,洗乾淨,切細片。 5. 薑,去皮,洗乾淨,一半切片,一半切碎。 6. 乾蔥頭,去皮,洗乾淨。 7. 蒜頭,去皮,洗乾淨,一半去皮,一半切碎。 8. 蔥,切去根部,切段,洗乾淨。 9. 鮑魚,放大碗內,加入大滾水,淥30秒,令其容易除去殼。 10. 鮑魚,倒去水分,用不鏽鋼羹去殼,除去內臟及嘴部。 11. 鮑魚,加入生粉1大湯匙,輕手撈勻,輕手用牙刷洗擦乾淨,放碟上,𠝹花。 12. 腰果,擎乾水,清水沖洗乾淨,擎乾水,吹乾15分鐘。 烹調: 1. 在鑊內,加入油400毫升。 2. 開最慢火。 3. 放腰果落鑊炸。 4. 油已慢慢燒熱,並已聞到花生油香味,四面推腰果。 5. 當見到腰果至微微金黃色,轉大火,炸1分鐘,逼出油分,令其更鬆脆。 6. 熄火,用隔篩擎乾炸腰果的油,攤凍腰果。 7. 大火煲滾1鑊水,加入油1茶匙,放三色椒、椰菜花及甘筍,灼2分鐘,擎乾水。 8. 大火在鑊內燒熱油100毫升。 9. 加入乾蔥頭,炸至金黃色。 10. 加入薑片,炸一炸。 11. 轉慢火,加入蒜蓉爆香。 12. 轉大火,加入鮑魚炒香。 13. 加入調味料: a. 蠔油1湯匙 b. 生抽1湯匙 c. 鹽適量 炒勻。 14. 加入所有蔬菜,炒勻。 15. 加入一半份量的腰果,炒勻。 16. 加入蔥段,炒勻。 17. 剩下的腰果,擎乾油,攤凍,放入玻璃器皿內儲存。 18. 完成,上碟,可享用。 Abalone with cashew nuts Ingredients: Knife Supreme Peanut Oil Cashew nuts 1 catty Fresh abalone 10 Nos. Tri-colour bell peppers 1 No. per each Cauliflower appropriate amount Carrot half No. Ginger 1 No. Shallots 8 Nos. Garlics 1 big cube Green onion appropriate amount Preparation: 1. Cashew nuts, put in a glass ware. Add in 2 tbsp of cooking salt. Add in tap water, soak for an hour or more, to remove dirts, and add in some salty tastes to them. 2. Bell peppers, rinse with tap water. Cut anchors. Remove seeds. Cut in small pieces. 3. Cauliflower, rinse with tap water. Cut in small pieces. 4. Carrot, get it peeled. Rinse with tap water. Cut in small slices. 5. Ginger, get it peeled. Rinse with tap water. Half is to be sliced and half is to be chopped well. 6. Shallots, get them peeled. Rinse with tap water. 7. Garlics, get them peeled. Rinse with tap water. Half is to be peeled and half is to be chopped. 8. Green onion, cut the root. Cut in lengths. Rinse with tap water. 9. Abalone, put in a big bowl. Add in boiled-up water. Soak for 30 seconds, in order to help removing the shells easily. 10. Abalone, pour away water. Remove shells with a stainless steel spoon. Remove the intestines and its mouth. 11. Abalone, add in 1 big tbsp of tapioca starch, lightly mix well. Lightly rinse with a toothbrush. Put on plate. Make slight cuts on it. 12. Cashew nuts, get them drained. Rinse thoroughly. Drain. Blow dry for 15 minutes. Steps: 1. In a wok, add in 400ml of oil. 2. Turn to low flame. 3. Put the nuts in the wok for deep frying. 4. Oil has been slowly heated up, smell of the oil can be felt. Push the nuts to the centre of wok in 4 sides. 5. Once you see the colour of the nuts has been changed to light golden yellow, turn to high flame, deep fry for a minute in order to help releasing oil from the nuts, to be more crispy. 6. Turn off fire. Use a filter to drain the oil from the nuts. Wait for cooling down of them. 7. Heat up a wok of water at high flame. Add in 1 tsp of oil. Put the bell peppers, cauliflower and carrot, boil for 2 minutes. Drain. 8. Heat up 100ml of oil at high flame in wok. 9. Add in shallots, deep fry them into the colour of golden yellow. 10. Add in ginger slices, deep fry for a few seconds. 11. Turn to low flame. Fry the garlics well. 12. Turn to high flame, add in abalone, fry well. 14. Add seasoning: a. Oyster sauce 1 tbsp b. Light soya sauce 1 tbsp c. Salt appropriate amount Fry well. 15. Add in all the vegetables, fry well. 16. Add in half of the nuts, fry well. 17. Add in green onion, fry well. 18. The remaining nuts, get them drained. Wait for cooling down. Put into a glass container for consumption later. 19. Complete. Put on plate. Serve.. Traditional Turnip cake, much much time is needed.
