We spent the day exploring the Oregon Coast mountains and forests for wild edible mushrooms and we got lucky! In the higher coastal forest, we foraged five lobster mushrooms, then dropped to sea level and found seven beautiful king boletes, also known as porcini mushrooms. We brought the mushrooms home to clean, rinse, and cook a homemade pizza topped with smoked pork jowl, fresh porcini, white garlic sauce, and fresh sage.
