Cut the eggplant into four parts and slice it thinly. The quantity depends on how much eggplant you use. 2. Beat 1–2 eggs, usually 1 egg per eggplant. 3. Slice garlic and onion thinly (optional – in this video, I didn’t use onion because I didn’t have enough left). 4. Heat cooking oil in a pan. 5. Add the garlic (and onion, if using) and sauté until golden brown. 6. Add the sliced eggplant and cook until soft. 7. Season with salt or soy sauce (I use 2 tbsp of soy sauce). 8. When the eggplant is almost cooked, pour in the beaten egg and mix well. 9. Stir until everything is well combined and cooked. 10.
