Brown bacon. Remove. 2. Sear beef in batches. Remove. 3. Sauté onion, carrot, garlic. Stir in tomato paste & flour. 4. Add wine, stock, herbs. Return beef & bacon. 5. Cover and simmer 2–3 hrs until tender. 6. Sauté mushrooms separately; add last 20 mins. 7.
