An abundance of eggs.. How do we use them?

This week I wanted to talk to you about how we can use an abundance of our eggs. Now grant it, this is by no means ALL the ways to use up this plethora of eggs, but merely a few ways. When we make an egg scramble I use no less than a dozen eggs for my brood at a time and oftentimes it's almost a dozen and a half. Shannon really enjoys breakfast burritos so I will wrap up any leftover eggs in tortillas and then wrap them for the freezer... so truly none go to waste. Today I am sharing with you 3 simple ways you can use your eggs. #1 is egg noodles. This is a super simple recipe that I've used for many, many years. They are tasty, easy, and quick. #2 is freezing. Using the right technique you can freeze eggs and then thaw them for a big frittata or quiche at a later date, especially when egg production is down from your hens. #3 is egg bites.
