Not a dinner recipe that took me almost a month to develop?!! But for real, this citrus salmon was a labor of love, but it came out so easy, so perfect and so impressive if you are feeding a crowd. And you can't go wrong with a side of fluffy herby quinoa to pair with it. This recipe might be easy, but it's perfect enough to deserve a whole YouTube video. Full recipe is below! CITRUS SALMON Serves 2-4, depending on how hungry everyone is. Ingredients: Juice from 1 lime Juice from 1 orange 1 tbsp soy sauce 1/2 tbsp fish sauce 1 tsp toasted olive oil 2 cloves garlic 1" knub ginger 1 lb salmon Salt & pepper to taste For toppings: scallions, extra orange slices, sesame seeds Instructions: Set the oven to 325F, coat the salmon generously with salt and pepper and roast for 15-16 minutes. While the salmon is roasting, prepare the sauce but combining all the ingredients in a bowl. Whisk well. When the salmon is out of the oven, flake it away from the skin and place directly into the marinade. Top with orange slices, scallions and sesame seeds and serve. FLUFFY HERBY QUINOA Ingredients: 1 cup quinoa 2 cups water 2 tsp olive oil 1 handful dill ½ handful cilantro (leaves only) Optional, juice from one orange Salt & pepper to taste Instructions: Rinse the quinoa and add it to a pot or skillet, add in the water and olive oil and bring to a boil. Immediately bring the heat down to a simmer, cover and cook for 10-12 minutes or until the water is absorbed. Remove the quinoa from the heat, leave it covered for 5 minutes. Then fluff with a fork and season with salt and pepper. Add in the dill, cilantro, and a squeeze of orange, mix and serve. + + Thank you to Bare Bones Filmmakers for producing this episode.
