Then pour the egg mixture into the hot milk and continue stirring, returning it to the heat. Heat to 165°, remove from heat, transfer to an airtight container and cool in the refrigerator preferably overnight but at least a few hours. This is your custard base, the longer it cools the creamier it’ll become.
