This is a great story of what a knife goes through in a household of four. An experiment was conducted using an unbelievably amazing knife. The Yoshikane 180 mm Santoku is made of SKD steel. The rules were that the knife would be used by everyone in the family for every kitchen need. Nothing unusual! The knife was never honed. It has never been sharpened until this video. The time span of the experiment was 2 1/2 months. In this video, we show you what happens if you just neglect your knife. Then we show you what can happen if you simply hone the knife with a honing rod. Next up is showing you I can happen if you simply sharpen the knife on one stone. Of course, we had to throw in, at the last second, a couple of strokes on a leather strop with diamond emulsion. It's amazing what gunny juice can do at .5 µm on a leather strop.
