Hooooly mackerel it’s our last episode of season 2 (thanks again @Decked for keeping me and the crew packed to perfection across the world!), so we had to bring in the big fish!!! Brad & the gang spent two unseasonably warm days this past October with the team at Island Creek Oysters of Massachusetts - specifically CEO Chris Sherman and company founder Skip Bennett. @IslandCreekOysters Today’s episode is gonna focus on their newest venture, which they started around 2015 (way before it was cool on Tik Tok, just sayin): TINNED. FISH. It’s as delicious as it is practical, and the opportunities are endless - basically anything you can think of, you CAN CAN. Let’s be clear, this ain’t ya solid white albacore that’s been in your pantry for two years, ok?? If you haven’t jumped on the canned seafood train yet, this is gourmet-grade fish, mussels, clams, and oysters packaged beautifully with garlic and oil and spices and all sorts of fun stuff. I partnered up with ICO to turn one of my favorite recipes - seared mackerel and sun gold tomatoes - into a limited release product. On this episode, we’ll head out to one of their farm sites to go digging for some clams, learn about the “meroir” of the area, and then head to their cannery and perfect the “Mack Pack” recipe for retail sale.
