A very classic Swedish pastry! We updated Seb's (The Fuzz) grandma's Kanelbullar recipe a few years ago and it became our favorite since then. We love these Cinnamon Buns so much and we are so happy to share this recipe with you! Recipe for about 30 Buns (Use a scale if you have one) Ingredients (Dough) 4 and 1/2 teaspoons (14 g) of active dry yeast 2 cups (500 ml) of whole milk + 2 Tablespoons for the egg wash 1 Tablespoon ground cardamom 1 cup and 1 tablespoon (250 g) of softened unsalted butter 1 cup (200 g) of granulated sugar 7 and 1/2 cups (900 g) of "00" flour or all-purpose flour 1 and 1/2 teaspoon of salt Ingredients (Filling) 3/4 cup (170 g) of softened unsalted butter 5 Teaspoons of ground cinnamon 1/2 cup (90 g) of Granulated sugar 1/2 cup (90 g) of Brown sugar Decoration & Topping Pearl Sugar 1/2 Cup (100 g) or as much or less you like. Egg wash 1 egg 2 tablespoons of milk A pinch of salt Simple syrup (This keep the inside of Buns Soft for a long period of time) 1/2 cup (90 g) of granulated sugar 3/4 cup (180ml) of water Directions: Begin with the filling: Combine softened butter, sugar, brown sugar, ground cinnamon, and set aside. The dough: Using two medium/large bowls separate the flour into 2 equal parts. Mix half of the flour with sugar, the yeast, and ground cardamom. Pour in the milk and mix with a wooden spoon, then add the salt and stir again. Add one-third of the other half of the flour and turn it in. Add the softened butter and the second-third of the flour. Now it's time to work with your hands. Combine the rest of the flour and turn the dough onto a clean surface and knead with your hands for about 15 minutes, or until the dough is smooth, soft, and elastic (You can also use a stand mixer). Roll out the dough: Use a rolling pin to roll the dough into a 27 x 50-inch (about 70 x 50-cm) rectangle. Spread evenly the filling mixture across the entire surface of the dough. Starting from the long side fold the dough in half as shown in the video instruction. Gently run the rolling pin over the dough to press out any big bubbles. Using a pizza cutter or a knife, slice the dough into 1/2 X 9-inch long strips. You will have about 30 strips in total. Swirl each strip around the Index finger and the middle finger and tuck the loose end in at the bottom. Let the buns rise under a kitchen towel for about 2-3 hours. While the buns are rising, make the simple syrup. In a medium saucepan combine sugar and water. Bring to a boil, stirring, until the sugar has dissolved. Allow cooling and set aside. Preheat the oven at 390°F (200°C). When the buns are ready to bake, brush the top with egg wash (whisk 1 egg with a pinch of salt and 2 tablespoons of milk) then sprinkle with pearl sugar. Bake the cinnamon buns for about 15-17 minutes or until golden brown. Remove from oven, and brush with the simple syrup; cool on a wire rack before serving. Enjoy!
