Hello Beautiful souls!! In this How I eat in a day vlog I share with you my simple plant based meals as well as how I make my easy and nutritious vegetable pot pie. Remember to keep it about health and not about the skinny. Kikis vegetable pot pie: 3-4 meduim potatoes diced and boiled 2 - 10 oz bags frozen mixed veges (peas, corn, carrots, green beans mix) 1 cup diced onion 8 oz chopped mushrooms 1/4 cup diced celery 1 - 32 oz box vegetable broth 1 cup plant milk (I like soy milk) 5-7 tbsp corn starch and equal amounts cold water (use 7 tbsp corn starch for thicker filling) 1 tsp garlic powder 1 tsp poultry seasoning salt and pepper to taste 1 package vegan phylo dough boil potatoes until soft. in a pot water saute onion, celery, and mushrooms. once cooked down add the frozen veges, then add stock and bring to a boil. once boiling add 7 tablespoons cornstarch mixed in 7 tablespoons cold water....mix and boil to thicken. Turn off heat and add rest of seasonings and 1 cup plants milk. Taste and adjust seasonings. Transfer to an oven safe baking dish like a glass 9x13 . Take individual sheets of phylo and scrunch up on top, covering the pot pie filling. Bake on 400 for 20-30 minutes or until crust is nice and crispy. let cool to thicken...and enjoy!!
