Samosa is a popular Indian snack. It has a flaky, crispy outer covering and nice savoury stuffing inside. You can fill the stuffing of your choice. We are making aloo stuffing today. The stuffings can vary from veggies, kheema or cheese/paneer. But frankly, potato or aloo stuffing is the best. Ingredients: • 7~8 / 500 gm Potatoes • 2 cups / 220 gm Maida • 1/2 tsp Ajwain / Carom seeds • 1/4 cup / 4 tbsp Oil • Salt to taste • 1/2 cup / 120 ml Water • 1 tsp Oil • 1/2 tsp Cumin seeds • 1/4 tsp Fennel seeds • 1 finely chopped Onion • 1/4 tsp Turmeric powder • 1 tbsp frozen Peas • 1 tsp Garam masala • 1 tsp Coriander powder • 1/2 tsp Cumin powder • 2 tbsp Red chili powder • Salt to taste • 1/2 Lemon juice • Finely chopped Coriander leaves • Oil for frying Method: • Steam potatoes on medium heat until 3 whistles. • Or you can cook potatoes on high for 5 minutes and then steam on low heat for 10 minutes. • Mix maida, ajwain, oil and salt well together until the mixture turns nice and crumbly. • You can use ghee in place of oil. • You can use half maida and half wheat flour or only wheat flour in place of maida. • Add water and knead stiff dough. • Cover and rest the dough for about 15-20 minutes. • Peel the steamed potatoes and mash potatoes a little. • You can chop the potato of you want. • Heat up oil in a pan and add cumin seeds. • When cumin seeds splutter, add fennel seeds and mix well. • Add onion and fry well until it gets light golden color. • Add turmeric powder and frozen peas and mix well. • If you are using fresh peas then add them along with onion. • Add potato, garam masala, coriander powder, cumin powder and red chili powder and mix everything well together. • You can use kitchen king masala in place of garam masala. • Add salt and mix well. • Add lemon juice and coriander leaves and mix well. Stuffing for samosa is ready. • You can use amchoor powder in place of lemon juice. • Knead the dough really good for about 2-3 minutes and take a small portion from it. • knead it well to make soft and even and roll out a thin puri of diameter about 6-8”. • Cut it into 2 parts and take one of them. • Spread a little water along the horizontal portion and fold it to make cone. • Seal the edges really good. • Fill in the stuffing and spread a little water along one side. • Close the samosa up and seal it well. • Heat up oil on high heat and when the oil is hot enough, reduce the heat to low. • Drop samosa into hot oil and fry well until it gets nice golden color from all sides. • When samosa is fried well from both sides, take it out, drain excess oil and transfer it on a wire rack. Samosa is ready. • You can make 12 samosa from the ingredients used.
