Strawberry cheese cake For the base 250g Leibniz biscuits 120g melted butter For the cheese layer: 600g of fresh cream cheese(Philadelphia) 100ml evaporated milk 200ml sweetened condensed milk 2 Tbsp lemon juice 2 eggs ½ cup sugar 250gm fresh strawberries For the Topping: 500gm fresh strawberries 100g caster sugar 60ml water 2 Tbsp lemon juice 1 Tsp vanilla extract ½ Tbsp cornstarch In a chopper grind the biscuits into fine crumbs. Pour in the melted butter into biscuit crumbs and combine well. Line the base and sides of a 26cm round baking pan with sheet and spread the biscuit crumbs evenly into the pan. Press with a spoon or glass for a perfect even base. In a large bowl give cream cheese and beat, add evaporated milk and beat until well combined. Add lemon juice and beat until combined. Now add sweetened condensed milk and bet to combine. Add both eggs and sugar and beat again until combined. Layer the cake base with sliced strawberries and pour over the cream cheese mixture. Bake in the preheated oven at 170°C for abou an hour. Strawberry sauce While cake is baking, we can prepare the strawberry sauce. Wash amnd slice the strawberries in thin slices. In a saucepan give ⅔ chopped strawberries and all the rest sauce ingredients and let cook on medium heat for 6-8 minutes until it starts to thicken. Now add the rest strawberries, mix and turn off the flame, remove and let cool. When the cake is done, let cool first for half an hour in the form.
