Spring onions grow quickly and are ready to harvest in a short time. In this video, I show how I grow spring onions from seed to harvest. Salad onions are varieties that have been bred to make a white stem with firm leaves, harvested before bulbing. The common name of ‘spring onion’ reveals how they are at their best in spring, before leaf diseases appear, and because they were often the only onion available in spring, between old and new crops. Imagine delicious fresh green onion leaves and stems as early as spring equinox – a fine way to enliven early salads, soups and many other dishes. They are from sowing a salad variety, such as White Lisbon Winter Hardy, in late August. Spring-sown salad onions, sown February to April, will not be ready until May or June, depending how large you want them to grow. Left to grow into bulbs, they are still tasty raw or cooked.
