Pork Carnitas Tacos: Peruvian Chicken and Rice: 2 chicken breasts sliced in half 1 bunch of green scallions 1 jalapeño 1 Roma tomato 2 garlic cloves Fajita seasoning (see below) Salt Pepper Olive oil Lime (optional) Jasmine rice (we like Mahatma) Butter Fajita seasoning: 2 tsp Paprika 1/2 tsp Onion powder 1/2 tsp Garlic powder 1/2 tsp Chili powder 1/2 tsp Dried Oregano Wash and dry produce. Peel and mince or grate garlic. Trim and thinly slice scallions, separating whites from greens. Mince jalapeño, removing ribs and seeds for less heat. Dice tomato into ½-inch pieces. Melt 2 TBSP of butter in a small pan over medium heat; add scallion whites, garlic and 2 tsp Fajita Spice to pot. Cook, stirring, until softened and fragrant, 2-3 minutes. Add to pressure cooker along with 2 cups of jasmine rice and 2 cups of chicken broth. Rice on high 4 min. Quick release Pat chicken dry with paper towels. Season all over with remaining Fajita Spice, salt, and pepper. Heat a drizzle of oil in a large pan over medium-high heat. Add chicken and cook until browned and cooked through, 3-5 minutes per side. Fluff rice with a fork. Stir in tomato, scallion greens, a squeeze of lime juice (if you like), and as much minced jalapeño as you like.
