Take half kg of small brinjal, slit the brinjal into four till its head. Add the slit brinjal into the curd masala, and add fried onions, mint and coriander leaves. Let the marinated brinjal sit for 20 minutes. To a wide kadai, add two tbsp. of oil and ghee, Once the oil gets hot, add the whole spices and fry it . Add sliced two onions and sauté it to a golden brown colour. Add a tsp of ginger garlic paste and a tsp of green chilli paste. Mix it well. Then add the marinated brinjal pieces and allow it to cook for five minutes. Add a tbsp. of coconut powder and cashew powder. Mix well, Brinjal gravy is ready. To a bowl, add water, add the soaked basmati rice, salt and the whole spices, and cook for five minutes. Strain the water and keep it aside. To a bowl, spread the cooked brinjal masala evenly and top it with cooked basmati rice. Add 2-3 tsp of saffron water , 2-3 tbsp of ghee poured evenly, add some fried onions and a handful of coriander and mint leaves. Cook for 15 Minutes. Then open the pot, Brinjal biryani has come out very well, Gently mix the rice with the masala. Yummy and delicious brinjal biryani is ready to be served nice and hot with the raita of your choice.
