Now, the food industry is trying to turn customer experience with nitrogen gas into a pleasant one through unique nitrogen-infused snacks, coffee and ice cream. Park Se-young has more. They call this dessert Dragon's Breath... because when you eat it, you can breathe vapor out of your mouth and nose. The dragon-like smoke comes from liquid nitrogen. The ice cream is fast-frozen condensed milk infused with liquid nitrogen. And because it's frozen in just a few seconds, less air is whipped into the ice cream, giving it a soft, even chewy texture. "Young customers like seeing the smoke from the nitrogen, and the ice cream is healthier because nitrogen replaces the additives normally used to lower the temperature." If you mix nitrogen into coffee, you get beer-like foamy bubbles and a smooth mouthfeel. Nitro-brewing also helps slow down the coffee's oxidation. Too much oxygen in coffee gives it a sour and bitter taste. "When nitrogen is mixed with coffee, the surging effect creates a rich layer of foam resembling beer."
