Brewers in the 1800s didn’t waste a mash. With a method called parti-gyle, they could create multiple beers from the same grain bill by separating the first and second runnings of the mash. The first runnings became strong export beers, while the later runnings became lighter “small beers” In this episode of my Baltic Porter series, I’m using that same technique to make two beers from one brew day: a rich Baltic Porter and a lighter “Parti Porter” Same mash.
