Healthy and Delicious creamy kheer made of makhana, desi khand, milk and infused with the aroma of fragrant cardamom powder. Strawberry compote adds a beautiful hue and fruity flavour to this super delicious kheer. Ingredients: 200 grams Strawberries 1 tsp Baking soda 2 tbsp vinegar 1 tsp Ghee 1 cup Makhana 4 tbsp Desi Khand ( Raw cane sugar) 1 litre Milk 1/2 tsp Cardamom Powder Chopped strawberries and pistachios for garnish Instructions: 1. Add strawberries to water filled bowl. Add baking soda and vinegar to the water. Mix it well and leave it for 10-15 minutes. ( This step will remove all the dirt and pesticides from strawberries) 2. Strain the strawberries and cut them into small pieces. 3. Add strawberries and 1 tablespoon of desi khand to a saucepan. Cook the strawberries on medium flame for 8-10 minutes until it turns soft and juicy. Turn off the flame. It will thicken up once it cooled down. 4. Add ghee to a Kadhai or pan. Add Makhana and roast it for 10-12 minutes on low-medium flame until crisp. Transfer the makhana’s a plate let it cool down slightly. 5. In the same Kadhai add milk and let it come to a boil. Turn the flame to medium and reduce it to half. Stir in between to avoid milk scorching and spilling. 6. Meanwhile grind the makhana to a fine powder. 7. Add the powder to the milk. Mix it well and break the lumps. Cook till it thickens. 8. Add desi khand and cardamom powder. Mix it well and cook for 2-3 minutes until it becomes thick and creamy. Turn off the flame. 9. Add strawberry compote and mix it well. 10. Transfer the kheer to a serving bowl. Garnish it with chopped strawberries and pistachios. Serve it chilled. 11.
