Fun with US Craft: Edelbrand IPA Eau de Vie, Tom's Foolery 8yo Bonded Applejack

Next week I'm hitting more American craft stuff, and as a preview I wanted to finally review two bottles that have been waiting in the queue for quite awhile. I've got the sequel to that awesome Tom's Foolery apple brandy I reviewed a few years back (   • Yet More Apple Brandy for July 4: Laird's ...   ), and I've got another "Bierbrand" from the fine folks at Edelbrand - the last one was an imperial stout (   • Edelbrand Vinars da Gervosa No. 625 Russia...   ), and now it's an IPA. Fun will now commence: Edelbrand Vinars da Gervosa No. 719, distilled from Urban Chestnut STLIPA Imperial IPA mash and finished in citra hops (Marthasville, Missouri; batch no. 22-003, distilled in 18-gallon pot still circa 2022; 40% ABV), 84+/100 Tom's Foolery 8 Year Old Bonded Applejack, Barrel No. 65 for K&L (Chagrin Falls, Ohio; pot-distilled and aged in new charred oak, aged 5/15 to 11/23; 50% ABV), 85/100 Y'all seriously have no idea how sad I am that Edelbrand is closing shop. It's not just that they make amazing spirits, but that they've been getting better over time, and this is a perfect example. You might not expect much from a 40% India pale ale distillate but this is frankly fabulous, thoroughly crushable stuff: malted milk balls, fruit, lemon bars, and ganj, and way better texture than it has any right to claim. The Tom's Foolery is better, but not actually by that much; it's absolutely delicious and improves a touch with water, but isn't actually a step up from that example from a couple of years ago. It'd be fantastic on a warm Autumn afternoon with an ice cube, though...
