This is not necessarily a quick pasta recipe (because almost nothing involving eggplant is “quick”) but that’s okay. The good news is this sauce is easy to scale up or down, and is something you can keep around to put on toast, use as a condiment, or dab on eggs. A note: Roasting eggplant isn’t hard, but it can be inconsistent—more so than any other vegetable maybe—but follow your instincts and be patient here.
