Pooris are deep-fried puffed Indian bread enjoyed as a snack or a main with a curry. Bajra Moringa Poori, as the name suggests, is deep fried, puffed bread made using fresh Moringa leaves and Bajra flour. Bajra or pearl millet is a gluten-free grain, very nutritious with body warming properties. It is mainly consumed in Rajasthan and many parts of western Uttar Pradesh during winters. Bajra Moringa Poori is a tasty, fluffy tiffin made by replacing wheat flour with bajra flour, Moringa in the regular making of poori. Bajra Poori mimics the taste of regular poori but adds lesser calories. Bajra poori is an alternate poori to must try at home for special occasions and weekends. Pooris - usually made with wheat flour, but slowly, millet flours are increasingly being used. Although these pooris are deep-fried, the addition of Moringa and bajra flour makes them a healthier choice. Traditionally, fresh methi leaves are used, but I have used Moringa leaves. A tasty and nutritious poori made with pearlmillet flour, Moringa, and spices, it is delicious and healthy. Pair it with a curry for a complete meal or enjoy them as on their own as a tasty millet snack.Bajra Moringa Poori is a twist to our regular poori with moringa flavour. Let's see how I prepared: Bajra Moringa Poori!!! Ingredients : 1 cup bajra/ pearl millet flour ½ cup whole wheat flour ½ cup fresh moringa leaves Salt to taste 1 tsp ajwain / carom seeds 1 tsp red chilly powder 1 tsp turmeric 1 tsp Oil Water as required Wheat flour for rolling pooris Oil for deep frying Method: Wash and strain Moringa leaves Roughly chop them and keep it aside In a mixing bowl, add all the ingredients with 1 tsp oil. Using your fingers, mix everything together. Using water, knead the flour mixture into a tight dough. Cover and keep aside for 15-20 minutes. Divide the dough into small lime size balls. Heat oil in a deep kadhai/wok. Roll each bajra dough ball into a circle by dusting wheat flour. To get the proper shape, use a cookie cutter or a lid and cut the edges (Unlike wheat flour pooris. bajra pooris are a little tricky. Once it's rolled, if it's difficult to remove, use a spatula as shown in the video.) Drop rolled poori into the hot oil and fry till it puffs up and turns golden brown on both sides. Remove on an absorbent kitchen towel to soak excess oil. Unique and Tasty Bajra Moringa Pooris are ready Serve hot Pooris with Vegetable Saagu. Enjoy 👍 Notes: Use only bajra/ pearl millet flour for a completely gluten-free Puri. If you find it difficult to roll, may be the dough is too soft.
