Well hello! We're back! And boy is it good to be back! I'm still off from bartending but the isolation was driving me insane! The crew and I figured out away to start filming again. Outside with plenty of space! I've had a little bit of time to figure out which cocktail I want to make for our first episode back. I found one in a book called Atomic Cocktails: Mixed Drinks for Modern Times - fittingly called - VAN GOGH'S ANTI-INSANITY LEMON TONIC. After all, Van Gogh did his best work in isolation looking out at the countryside through the windows of the Asylum he was staying in to cure his own Insanity! Hope everyone is doing ok. (15ml) CRÈME DE CASSIS OR CHAMBORD 1/4 oz. (7.5ml) LEMON SYRUP 4 oz. (120ml) LEMONADE 1.5 oz. (45ml) WELL-CHILLED LEMON VODKA 1/2 oz. (15ml) EMPRESS 1908 GIN IN A CHILLED 12oz. COLLINS GLASS, POUR THE CASSIS OR CHAMBORD INTO THE BOTTOM OF THE GLASS. ADD THE LEMON SYRUP. IT WILL SINK TO THE BOTTOM CREATING A LAYER OF SYRUP AND LIQUEUR. DO NOT STIR. FILL THE GLASS FULL WITH ICE. ADD THE LEMONADE, POURING GENTLY SO THAT THE BOTTOM LAYERS REMAIN UNDISTURBED. SLOWLY POUR IN THE CHILLED VODKA TO CREATE ANOTHER LAYER. TOP WITH EMPRESS 1908 GIN. SERVE WITH A STRAW AND SIP FROM THE BOTTOM. GARNISH WITH RASPBERRIES AND A LEMON TWIST. -------------------- BRUCE'S LEMON SYRUP -------------------- 3 – 4 LEMONS – 1/2 CUP (120ML) JUICE 1/2 CUP (100G) SUGAR CUT OFF AND RESERVE THE ZEST OF 1 OF THE LEMONS (AVOID THE BITTER WHITE PITH). JUICE ALL THE LEMONS UNTIL YOU HAVE 1/2 CUP OF FRESH LEMON JUICE. COMBINE THE JUICE WITH THE SUGAR IN A SMALL SAUCEPAN AND BRING THE MIXTURE JUST TO A BOIL OVER MEDIUM-HIGH HEAT. REDUCE THE HEAT TO MAINTAIN A GENTLE SIMMER AND COOK UNCOVERED UNTIL THE SYRUP IS SLIGHTLY THICKENED, ABOUT 10 MINUTES. TURN THE HEAT OFF AND ADD THE RESERVED LEMON ZEST. COVER AND LET IT SIT UNTIL COOL – ABOUT 20 MINUTES. REMOVE THE LEMON ZEST AND STRAIN THE SYRUP THROUGH A SIEVE.
