In this recipe, I’ll guide you step-by-step to make your own tortilla at home, with my personal twist for extra flavour. Let’s get cooking!" --- Tortilla de Patatas Recipe Ingredients: 4 medium potatoes 4 eggs 1 onion Salt and pepper, to taste 1 teaspoon baking powder (my secret ingredient!) 1 1/2 cups olive oil Instructions: 1. Prepare the Potatoes: -Peel the potatoes, cut them in half, and slice into 2mm-thick pieces. Set aside in a bowl. 2. Prepare the Onion: -Peel the onion, cut it in half, and slice into 2mm-thick pieces. Add to a separate bowl. 3. Cook the Potatoes and Onion: -Heat a pan over medium-high heat and add 1 1/2 cups of olive oil. Heat until small bubbles appear, but avoid letting the oil steam. -Reduce the heat to medium and add the sliced potatoes to the pan. Stir gently to spread them evenly. -Add the onions on top of the potatoes. -Season with 1 1/2 teaspoons of salt and pepper to taste. Stir to mix. -Cover with a lid and cook for 3-4minutes. -Flip the potatoes and onions occasionally to ensure even cooking. Stir periodically until they are golden brown. -Strain the mixture using a strainer over a bowl to drain excess oil. 4. Prepare Eggs and Combine: -Crack the 4 eggs into a large mixing bowl and whisk them as if making scrambled eggs. -Add the drained potatoes and onions to the bowl.
