Whether you’re a fan of Jamaican comfort food or want to explore real Caribbean cooking, this curry chicken recipe brings heat, heart, and heritage to your plate. 👇🏾 FULL INGREDIENTS LIST 👇🏾 🥘 5 pounds of chicken (cleaned & chopped) 🥄 2 tbsp all-purpose seasoning 🥄 1 tbsp onion powder 🥄 1 tbsp garlic powder 🥄 1 tsp black pepper 🥄 1 tsp ginger powder 🌿 12 crushed pimento seeds 🌶 1 whole scotch bonnet pepper 🌶 ½ sweet bell pepper (sliced) 🧄 3 garlic cloves (crushed or chopped) 🧅 1 medium onion (sliced) 🌱 2 stalks scallions (chopped) 🌿 2 sprigs of thyme 🥥 1 cup coconut milk 🥕 1 medium carrot (sliced) 🥔 1 medium Irish potato (diced) 🫚 1 piece fresh ginger (sliced) 🔥 Instructions: 1. Season chicken with dry spices, herbs, and aromatics. Let marinate for at least 30 minutes. 2. In a pot, sauté the seasoned chicken until browned. 3. Add coconut milk, carrots, and potatoes.
