pootharekulu originated in atreyapuram, a village and mandal headquarters in andhra pradesh's east godavari district. the sweet has a few centuries of history behind it (three centuries by some accounts). a peasant lady is claimed to have made the delicacy by combining sugar and ghee with leftover rice starch. atreyapuram people quickly began preparing rice flour wrappers, filling them with sugar and ghee, and folding them. they distributed the treats to candy makers throughout the two telugu states. in most cases, women create pootharekulu in their spare time while men work on the sweet's marketing. in 2016, the cottage industry's yearly turnover was predicted to reach rs. 3 crore. as part of the andhra pradesh tourism department's effort to popularise andhra cuisine, a group of cooks from east godavari made a 10.5-meter long poothareku in august 2018. pootharekulu is created with powdered sugar and ghee, and is produced from a type of rice batter called jaya biyyam ('biyyam' means rice) (clarified butter). a heated pot is used to make the edible film. a hole is drilled in the pot to make it acceptable, and the pot is alternately heated and rubbed with an oil-soaked cloth for three days to smooth the surface. to manufacture the films, coarse rice is ground into a batter for approximately two hours. after diluting the batter, a thin cloth is dipped in the solution and placed over the inverted pot with a flame underneath it. immediately, an edible film develops on the pot. the edible film is then covered with ghee and wrapped with sugar or jaggery. #putarekulu #atreyapuramputharekulu #rajamandry #andrapradesh
