Bottle Gourd Muthiya Curry(Without Frying) | Dhudhi na muthiya nu shake | curry | Dhudhi na dapka nu shake | Dhudhi nu shake Bottle Gourd Muthiya Curry (Without Frying) We will make steamed muthiyas, not fried ones. Step 1: Preparing the Muthiyas • Peel one bottle gourd (dudhi) and grate it. • Squeeze out excess water from the grated bottle gourd. • Add the following to it: • Turmeric powder • Coriander-cumin powder • Salt • Red chili powder • Chopped coriander leaves • Green garlic • Gram flour (besan) • A pinch of baking soda Step 2: Preparing the Gravy Paste • Make a paste using: • Garlic • Ginger • Green chili • Turmeric powder • Coriander-cumin powder • Salt • A little water or bi & butter milk (chaas) Step 3: Tempering (Vaghar) • Heat oil in a pan. • Add: • Dry red chilies • Cloves • Curry leaves • Cumin seeds • Asafoetida (hing) • Prepare the tempering well. Step 4: Making the Curry • Add the prepared paste to the tempering and mix well. • Add 1-2 spoons of water occasionally and keep mixing. • Then add water and buttermilk and let it boil. Step 5: Cooking the Muthiyas • Once the gravy starts boiling, gently add the muthiyas (drop them like methi dumplings). • Let them cook properly until fully done. • Finally, add chopped coriander leaves.
